Galacto oligosaccharide is a naturally occurring functional oligosaccharide, which is mainly found in trace amounts in animal milk.It is an oligosaccharide mixture with β(1-4), β(1-6), β(1-3) bonding galactose molecules on the galactose group in the lactose molecule.
Function
The sweetness is 30%~40% of sucrose, and the sweetness is soft and pure.
The viscosity higher than sucrose viscosity (75Brix at the same sugar content)
It is relatively stable under high temperature and acid conditions (pH3.0, 160ºC, 15min does not decompose), and can be used in acidic food
Good moisture retention and added to baked goods not only to provide a soft sweetness, but also to extend the shelf life
